Really enjoyed this piece Pamela. I feel a sense of loss even when I finish reading a book, so I really recognise the anticlimactic sense you describe.

I manage it through having a “Someday/Maybe” list, or and Elephant List where I park future things I will want to work on, might work on, but don’t have the bandwidth for right now. When I finish something and experience the (for inevitable) down that follows, I have a list of “Next” goals ready to go for me to choose from.
